METHOD:

  1. Prepare a macarons silicone mat on a work surface.
  2. In a planetary put the almond flour and powdered sugar.
  3. Sift the floury mixture into a bowl removing all the lumps.
  4. Beat the egg whites until stiff, adding the sugar little by little. Reaching the consistency of a rather solid meringue.
  5. Pour a few drops of dye into the meringue and mix from bottom to top to obtain a pastel pink color.
  6. Pour the meringue into a sac à poche and form the macarons on the mat. Gently press the mat on the work surface to make all the macarons flatten well and eliminate the air bubbles.
  7. Leave the macarons at room temperature until the surface is dry to the touch.
  8. While the macarons dry prepare the cinnamon filling: Heat the cream to a boil and then pour it on the previously chopped white chocolate and put in a bowl. Add a teaspoon of cinnamon.
  9. Once the surface is dry, place the macarons in a preheated oven at 160 ° C for about 12-13 minutes.
  10. Once cooked, remove the pan from the oven and let it cool at room temperature.
  11. When the cinnamon cream is very cold, pour it into a sac à poche and fill the macarons on the flattest part.
  12. Pack the macarons in a tin box and apply a label with the ingredients.
