Chocolates for Valentine's Day

I know, I know, celebrating Valentine's Day is old-fashioned for someone, but the chocolates will never be !!!

The chocolates are a perfect gift for all occasion, for all person (not those allergic eheh!), For all age ... so always! But Valentine's Day is perfect for these little moments of cuddles and sweetness!
But I must say that making chocolates isn't simple, so you have to be very careful if you do not want to make a disaster!

For this recipe you need a thermometer and a mold for chocolates

METHOD:
  1. Start to toast the hazelnuts in preheated oven at 150 ° for 35 minutes until they are well browned
  2. Prepare the caramel: pour the sugar into a saucepan, melting it slowly at low temperature and without mixing. The caramel must acquire a brown color.
  3. Add to the caramel half of the toasted hazelnuts and mix very quickly. Put everything on a silicone mat or on a marble top and remove the hazelnuts from each other using a wooden spoon (be careful not to burn your fingers, the caramel is really dangerous!)
  4. Once cooled, chop the caramelized hazelnuts and also the remaining half using a mixer.
  5. In a bowl crumble the wafers and add the chopped hazelnuts. Mix everything.
  6. Melt the chocolate gianduia and add it to the wafer and hazelnut mixture.
  7. Temper the dark chocolate: it should never exceed 31C °. Melt the chocolate in a water bath and, using a thermometer, continue stirring until it is melted, keeping the required temperature.
  8. The chocolate is ready to be poured into the mold! Once poured overturn the mold and beat it on the side to let the excess run off. This operation must be carried out on a tray in order to recover the cast chocolate.
    Put the mold to cool for a couple of hours.
  9. Fill the mold with the wafer and hazelnut mixture. Re-melt the chocolate recovered from the tray, always reaching a temperature of 31 ° C. Pour the melted chocolate back into the mold to cover the filling. Remove the excess with a spatula and allow to cool for another 2 hours.

  11. When the chocolates are very cold and solid, remove them from the mold and place them on a grate. Pour over the ganache to make them shiny.

And that's it! The chocolates are ready for Valentine's Day!
It 's true, it's not a simple recipe, indeed it requires a lot of precision, but if I succeeded you can do it too!

Now you just have to pack these sweets in a tin box and accompany them with a greeting card!
